Pectic enzyme is your best friend if you are using dessert fruit and are wanting a clear cider!

Added before fermentation pectic enzyme will break down the pectins in your juice so they will not form a haze in the presence of alcohol.

Use 1/2-3/4 tsp per gallon prior to fermentation.

Do not use if you are planning to Keeve.
